I recently had a conversation with a coworker. He was asking me if I had any recipe ideas for something that is easy and healthy. When I suggested a sheet pan dinner, he replied “What is that?”. So here is my quick, easy and healthy recipe for a sheet pan dinner!

The great thing about a sheet pan dinner is that the possibilities are endless! Choose your protein, veggies and marinade, toss them together and onto a sheet pan, and into the oven goes the pan. Voila!!! You have a quick, easy, and healthy dinner. It’s a great dish to serve on a busy week night or when you just don’t feel like dirtying a lot of pans.

For this night, I had some boneless chicken breast thawed. My favorite veggies to roast are usually zucchini, red onion, mushrooms, broccoli and cauliflower. Scott doesn’t like mushrooms, but really likes green bell and sweet peppers. I compromised and used yellow peppers and didn’t add mushrooms (that’s probably because I didn’t have any).

Once the meat and veggies are chopped in fairly equal sizes (if you cut everything differently, some will cook faster than others), put it all in a gallon sized zip lock bag. If you want something very quick, grab a bottle of Italian Salad dressing out of the fridge. I usually add about 1/2 cup of Extra Virgin Olive Oil, 1 clove of garlic minced (1 teaspoon of minced garlic from a jar), 1 Tablespoon Italian seasoning, 1 teaspoon pepper, 1-2 teaspoons of Garlic Salt, and a pinch of red pepper. You can add all the dry seasoning to the oil, whisk and pour into the bag. Seal the bag and give it a good shake.

Once all of the oil and seasonings are incorporated throughout the meat and veggies, pour them out onto an aluminum foil lined cookie sheet. Make sure that everything is evenly distributed on the pan. Roast in a 400 degree oven on the middle rack for 15 minutes, stir contents and bake for another 15 minutes. That’s it!

We will make a pan of rice and spoon the sheet pan dinner over the rice and serve with a salad. Quick, easy, healthy and oh so good!!. Mix and match your ingredients and let me know your favorite combination! Enjoy!!
